This baked doughnut recipe is a million times healthier than any fried doughnuts that I have ever eaten.
Although these doughnuts are super tasty they are not as soft as store bought ones. You could say they are a type of sweat bread with a whole in the middle and a fancy topping.
I have always found store bought doughnuts are a bit too sweet for my liking and I always felt bad about eating them because they were fried. This is a benefit of making your own. You are in control of how much you use and what you use as a topping. You can also choose to make savory doughnuts or sweet doughnuts.
Makes about 30 medium sized doughnuts.

Method to the baked doughnut recipe :
Heat 1 cup of the 1¼ cups of milk until warm to the touch. Add the yeast and sugar to the milk stir and set aside for about ten minutes to let it get frothy.
Lightly beat the eggs and add the remaining ¼ cup of milk, the olive oil and butter stir and set aside. Combine the flour and salt with the egg mixture and the now frothy yeast mixture. Knead together until the dough is one smooth and non sticky mass, add more flour if necessary. Cover the bowl and set aside in a warm corner to let the yeast do its work for 1 – 2 hours.
Once the dough is about double in size punch the air out of the dough. Divide the dough into sections as this will make it easier to work with. But also lets you determine the amount of dough you would like to use to prepare what kind of doughnuts.
Some are decorated after baking like coating with a cinnamon sugar mix or coated in
chocolate by brushing with/dipping in chocolate.
Others require ingredients to be kneaded in before going into the oven. These are blueberry doughnuts with white chocolate, or cinnamon doughnuts coated with sugar.
Roll out the dough until about 1 cm thick then use a suitable size of cookie cutter. You need a large circle for the outer circle and a smaller one for the hole in the middle. Should you decide on filled doughnuts you need only one outer circle.
Since I don’t have any doughnut hole shaped cutters or cookie cutters I used a water glass and a plastic drink bottle lid to make the hole. It’s just a matter of finding the
right shape. It is important that the hole in the middle is not too small otherwise the hole will close up during the rising and baking process because they rise quite a bit.
Place the doughnuts onto a baking sheet and let them rise for a further 30 minutes.
Preheat the oven to 200C°. Convert!
Bake the doughnuts for about 10 – 12 minutes or until they just start to get a golden colour. Let them cool before decorating.

Method to the baked doughnut recipe with blueberries:
It is important to have the blueberries either completely frozen or fresh. As when they are warmed to room temperature from frozen they become filled with liquid and tend to make the dough very wet and the juice squirts everywhere. Knead the blueberries into the dough and proceed as usual.
When baked let the doughnuts cool. Melt the chocolate either in the microwave or over a boiling pot of water. Dunk the doughnuts into the melted chocolate cover completely if you wish and set aside to dry.

After the doughnuts have cooled melt the chocolate either in the microwave or over a boiling pot of water. Dip the homemade doughnuts into the chocolate and cover either only the top or whole. Sprinkle the chopped roasted peanuts over the top immediately before the chocolate has time to harden.

Method jam filled baked doughnut recipe :
Follow the doughnut recipe but when cutting out the shape do not cut whole out of the middle and bake as usual.
When the doughnuts have cooled use the long thin attachment to your icing piper and spoon in the jam. Stick the icing pipe into the side of your doughnut to fill the inside with jam. Dust with icing sugar to complete.

After the doughnuts have cooled mix together the cinnamon and sugar with a little water or milk until it has reached a creamy but workable consistency. Brush the mixture over the doughnuts.

Add the cinnamon into the doughnut mixture when adding the flour and bake.
Once the homemade doughnuts have cooled, mix together the icing sugar with a
little water until it has reached a spreadable consistency and spread over the doughnuts.
