Homemade Broccoli Quiche Recipe
This popular meat free broccoli quiche recipe with feta cheese can be served warm, as a side dish or enjoyed as a snack throughout the day. Cold the quiche is great for a picnic or in a school lunchbox. Adjust its size to fit its purpose. When split into muffin forms it makes nice finger-food portions.
Broccoli is green so you know you are eating something healthy and the walnuts provide a nutty flavor that complements the broccoli well.

Broccoli quiche recipe
Serves 6 children or 3 adults
Ingredients for the base:
- 1 cup of flour
- 1 tablespoon of butter
- 2 pinches of salt
- 4 tablespoons of yogurt
- 1 teaspoon of honey
- Butter to grease the pie pan
Step by step method:
- Put the cup of flour, the tablespoon of butter, the two pinches of salt and the four tablespoons of yogurt, as well as the teaspoon of honey into one bowl and knead them into a smooth dough.
- Line a 28 cm pie form with the dough and form a 2 cm high crust around the edge. Afterwards set it aside to rest.

Ingredients for the topping:
Walnuts
Broccoli
Yellow onion
Olive oil
Parmesan
- 1/2 cup of walnuts
- 800g of fresh broccoli
- 1 onion
- 3 tablespoons of olive oil
- Spices: salt, pepper, nutmeg to taste
- 3 tablespoons of flour
- 1/2 liter of milk
- 2 eggs, whisked
- Spices: salt, pepper, nutmeg to taste
- 40g of Parmesan, grated
Instructions:
- Sprinkle the walnuts over the dough lined form.
- Wash the broccoli and cut the stem into small pieces and
cut the broccoli head into smaller heads. - Peel and dice the onion.
- Heat the olive oil and sauté the diced onion until translucent, then add the broccoli and the spices. Then let it cook for 10 minutes.
- Dust the flour over the broccoli and the onions.
- Stir and pour the 1/2 litre of milk over the broccoli mixture, season with pepper, nutmeg and salt. Let it sit on the heat for about 5 minutes then turn of the heat and let it cool slightly.
- Crack the eggs in a bowl and whisk them before adding them into the mix.
- Lastly stir the grated Parmesan under.
Bringing everything together:
Preheat the oven.
Spread the broccoli filling over the base which is covered in walnuts and bake the quiche at 180C°. Convert! for 30-40 minutes.
This recipe can be served as a snack, a starter or accompanied by a soup and/or a salad as a main dish.
